Today, we're featuring a light and refreshing recipe perfect for summer grilling: Cannabis-Infused Grilled Vegetable Skewers, using cannabutter made from the premium Mountain Mist strain. This dish combines the fresh, earthy flavors of Mountain Mist with a medley of summer vegetables, making it a perfect addition to any BBQ or outdoor gathering.


Why Mountain Mist?

Mountain Mist by Veterans Choice Creations is a balanced and invigorating cannabis flower with a THC content of 19.7% and total cannabinoids at 27%. Its crisp, earthy aroma and uplifting effects make it ideal for creating a versatile cannabutter that enhances both relaxation and creativity. Ingredients

For the Cannabutter:

- 1 gram of Mountain Mist cannabis flower

- 1 cup unsalted butter

- 1 cup water


For the Skewers:

- 1 zucchini, sliced into rounds

- 1 yellow squash, sliced into rounds

- 1 red bell pepper, cut into chunks

- 1 yellow bell pepper, cut into chunks

- 1 red onion, cut into chunks

- Cherry tomatoes

- 2 tablespoons cannabis-infused herb marinade (recipe below)


For the Cannabis-Infused Herb Marinade:

- 4 tablespoons Mountain Mist cannabutter

- 2 cloves garlic, minced

- 1 tablespoon fresh rosemary, chopped

- 1 tablespoon fresh thyme, chopped

- 1 tablespoon fresh parsley, chopped

- 1 tablespoon lemon juice

- Salt and pepper to taste


Directions 

Making the Cannabutter:

1. Decarb the Cannabis: Preheat your oven to 245°F (120°C). Break up the Mountain Mist cannabis flower into small pieces and spread them evenly on a baking sheet. Bake for 30-40 minutes, stirring occasionally.

2. Infuse the Butter: In a saucepan, melt the butter and add water. Once the butter has melted, add the decarbed cannabis. Simmer on low heat for 2-3 hours, stirring occasionally. Ensure the mixture does not boil.

3. Strain the Butter: Strain the mixture through a cheesecloth into a bowl to remove the plant material. Let it cool and solidify in the refrigerator.


Preparing the Cannabis-Infused Herb Marinade:

1. In a small saucepan, melt the Mountain Mist cannabutter over low heat.

2. Add minced garlic, rosemary, thyme, parsley, lemon juice, salt, and pepper. Stir well to combine.

3. Remove from heat and let it cool slightly.


Assembling the Skewers:

1. Preheat your grill to medium-high heat.

2. Thread the zucchini, yellow squash, red and yellow bell peppers, red onion, and cherry tomatoes onto skewers, alternating the vegetables.

3. Brush the vegetable skewers with the cannabis-infused herb marinade, ensuring they are well-coated.


Grilling the Skewers:

1. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.

2. Remove from the grill and brush with any remaining marinade.
